A new fine-dining bar and restaurant serving up quality British cuisine is set to open in Maldon High Street this evening (September 1).

HAUS will offer seasonal menus featuring small plates of fresh and locally sourced British foods, ideal for sharing.

A bar at the front of the restaurant will welcome walk-in customers, providing a sophisticated drinks venue. It is hoped to become an ideal place for first dates.

Julian Hoad, a carpenter by trade, got the keys to the former 185 Bar venue nine months ago. Since then, he and his team have worked tirelessly to redecorate it in an elegant style.

Having fallen in love with the original features of the building, previously home to the notorious Warwick Arms, Julian hopes to improve its reputation.

"It would be a shame to condemn such a beautiful old building because of its previous owners," Julian told Nub News.

"It just needed the right people to come in and do it justice. This is certainly a passion project."

Hannah Milsom, Julian's business partner and HAUS' Executive Chef spent several years cooking for the Royal Family. She has worked at Buckingham Palace, Balmoral, and Sandringham, and has won several accolades.

Julian said: "It's a partnership made in Heaven."

He describes it as a "massive career change" for him, going from the construction industry to becoming a fully-fledged restauranteur.

While he is focused on his newest venture, Julian is still Director at William Charles Developments. Therefore, he was able to draw on his own resources to help renovate the restaurant.

Following a partnership with Lauriston Farm in Goldhanger, HAUS sources all its meat and vegetables locally. The farm is 'biodynamically certified', considered the gold standard for organic produce.

When sampling the goods on sale at Lauriston Farm, Julian was amazed at the quality of produce.

"I had the most flavoursome broccoli I'd ever eaten," he said.

"It blew my mind even more than the fillet steak – and I love steak!"

Maldon has a wide variety of restaurants featuring cuisine from all over the world, but Julian feels the town is "crying out" for decent British food. He promises fair prices for the business, suppliers, and for customers.

The restaurant's courtyard is set to open in spring 2024, with live music from local bands.

Bookings are currently being accepted for this weekend. Visit the HAUS website for more information.

HAUS is just one independent business Maldon Nub News is proud to partner with. Without community-minded supporters like Julian and Hannah, Nub News would not be able to produce locally relevant, clickbait-free news for the Maldon District.
